Les Caves du Prieure Cremant de Bourgogne named after a local abbey that used to serve as their winery, Domaine du Prieure has been a stalwart of the wine community in Savigny-les-Beaune since 1921. Stephen Maurice is the current member of the family at the helm of the domaine. He farms 31 acres of vineyards in the Hautes Cotes de Beaune using sustainable methods, including ploughing and eco-friendly pest control. In this part of Burgundy, still Chardonnays and Pinot Noirs get the limelight, but when blended together and fermented in bottle using the traditional méthode Champenoise, they become delicate and ethereal sparkling wine, or crémant. Blending 70% Chardonnay with 30% Pinot Noir, Stephen creates a classic brut style, rich in racy minerals and floral aromas, with hints of honey, spiced apples and white peaches. Only 500 cases made
